The process of making jaggery is entirely different from how the sugar is made and the jaggery is made in such a way so that the minerals or the vitamin content is intact, whereas in the regular sugar, all the minerals and the vitamins have been bleached in order or take it look like crystal. So that is the main difference between jaggery and sugar. Jaggery has been a traditional sweetener especially in the rural side because it has its own health benefits and jaggery helps in cooling the body instead of heating up the body and the jiggery water can be added to the traditional beverages for coffee or tea and it can be equally palatable also and the chances of developing type 2 diabetes and other diseases which happens because of the consumption of sugar can be reduced when compared to the consumption of jaggery and all the process of making jaggery is completely different form making of sugar. Traditionally jaggery is made to boil upto a certain temperature and it is further boiled to make it like a paste consistency so that the minerals and the vitamin content stay intact, whereas the sugars, once it reaches a certain boiling point, charcoal is added to it especially the bone charcoal to added to it to make it look white and make it a crystal. So that removes the entre mineral, vitamin content in the sugar and it gets very quickly absorbed in the blood. That is the main difference between the jaggery and the sugar, whereas the jiggery has long sucrose chains and it talks longer time to get absorbed by the body and it helps in keeping the energy level quite stable when compared to the sugar, so that is the main difference between consuming jaggery as a sweetener on a daily basis an consuming sugar.
